Grandma's Diabetic Fruit-Cake Loaves Recipe is Sugar-Free


My Grandparents loved their sweets, but Grandma was always looking for ways to reduce their sugar while still providing a tasty dessert.  Below is an example of an quick and easy sugar-free 13-ingredient recipe that includes nuts and 3 fruits: apple, banana, and raisins.


Diabetic Fruit-Cake

Ingredients:

1 cup oatmeal
2 large eggs
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup unsweetened applesauce
1/2 cup shortening
1/2 cup chopped nuts
1/2 cup raisins
1 cup flour
1/2 teaspoon cloves
1 banana (mashed)
1 Tablespoon peanut butter
2 Tablespoons artificial sweetener

Steps:

  1. Preheat oven to 350 degrees.
  2. Sift flour, soda, and spices together.
  3. Combine all ingredients mixing well.
  4. Bake in 2 small loaf pans about 39 to 35 minutes - test with toothpick.
