Grandma's Unbaked Coconut Cream Cookies Recipe

Last month, I provided lots of holiday pie recipes, and the month before it was cakes and side dishes.  Since Christmas is the season for cookie swaps, I thought i would do mostly cookies this month.  If you want to make holiday cookies a family affair, try my tips for easy Decorated Christmas Cookies for kids, ideas for group Gingerbread / Graham Cracker Houses, treats kids can make from cereal, watch Reindeer Cookie video, or go for easily stacking a Christmas Cooke Tree centerpiece.

The recipe below is a differently flavored cookie than my Mom's No-bake Chocolate-Peanut Butter-Oatmeal Recipe that is also very quick ad easy-to-do.
