If you do not care about calories, you can try Grandma's Chewy version or variations of Quaker's Vanishing Oatmeal Raisin Cookies, which is my son's favorite substituting Craisins.
Oatmeal Raisin Cookies
Ingredients:
2 cups sifted flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
2 cups quick oats
1 cup raisins
2 eggs
3/4 cup oil
1/2 cup milk
1 teaspoon vanilla
Steps:
- Preheat oven to 350 degrees.
- Grease cookie sheet.
- In large bowl, sift flour, sugar, soda, and spices together.
- Add oats and raisins. Mix well.
- Beat eggs in small bowl; add oil, milk, and vanila.
- Add liquid mix to dry ingredients and mix well.
- Drop batter by rounded spoonfuls 1 & 1/2 inches apart on greased cookie sheet.
- Bake at 350 degrees for 15 minutes or until golden and crisp around edges.
