Fresh Fruit Cake
Ingredients:
- For batter
1 cup shortening
2 cups sugar
4 eggs
3 teaspoons baking powder
1 teaspoon vanilla
3 cups flour
1 cup milk
* Food coloring - Red, Green, Yellow
- For layers
1/2 to 1 cup chopped nut
1/2 cup Maraschino cherries (chopped)
2 bananas (mashed)
1/2 cup crushed pineapple (drained)
Steps:
- Preheat oven to 350 degrees.
- In large bowl, cream together shortening and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add dry ingredients and milk alternating, creaming all together well.
- Divide batter into 4 bowls and color 3 or them red, green, and yellow. Leaving 4th one plain (or add a little cocoa to make it light chocolate).
- To plain (4th bowl) add nuts. To yellow batter, add pineapple. To red batter, add cherries. To green batter, add bananas,
- Pour batter into 4 greased and floured layer pans.
- Bake at 350 degrees until tests done (time depends on pan size, start about 25-30 minutes, if toothpick inserted in middle does not comes out clean, add 5-10 minutes)
- Cool completely. Then frost with 7-minute icing. Spread icing on top of each layer and assemble cake.
7- Minute Icing
Ingredients:
1 cup sugar
2 Tablespoons corn syrup
2 egg whites
2 Tablespoons water
Steps:
- Put all ingredients in top of double boiler.
- Beat over hot water until thick enough to spread on layers.
