Variations:
- My spouse makes a similar concoction - without the pimentos and adding in large grated cheddar cheese instead.
- Often carrots are mixed with peas in a warm vegetable side dish, but you can put in cubed carrots instead of celery for the crunch in this salad.
- I have also seen a few recipes on-line where a Tablespoon of bacon bits was added for additional flavor.

English Pea Salad
Ingredients:
1 medium size can English peas (drained)
1/4 cup chopped celery
1/4 cup pimentos
1/4 cup dill pickle (chopped)
1 Tablespoon mustard
1/2 cup mayonnaise
Salt, Pepper, Paprika (to taste)
2 hard-boiled eggs (chopped)
Steps:
- Mix all together, but add eggs last (so they stay in visible chucks).
- Cover and chill for at least 1/2 hour.
- Garnish with paprika (if desired).
