Crockpot Onion Soup Recipe


We love looking for great sounding recipes to try that are easy to fix.  We bought a recipe box at an estate sale and found this wonderful recipe for a simple version of French Onion soup that can be made in a crock pot.  


Crockpot Onion Soup

Ingredients: 

4 cups (or 1 quart) beef broth 
3 cups yellow onions, thinly sliced 
1/4 cup butter
1/2 teaspoon salt
1/4 cup white sugar 
2 Tablespoons flour
1/4 cup cooking sherry (or substitute water)
1 cup grated Parmesan cheese (or substitute Swiss) for topping

Steps: 

  1. Pour beef broth in crock pot.
  2. Slowly stir and cook onions and butter in a skillet for 15 minutes on low.
  3. Mix remaining ingredients (excluding cheese) into skillet and stir well.
  4. Pour skillet mix into crock pot with broth.
  5. Coook on low for 7-8 hours or on High for 3 hours.
  6. If desired, put optional slice of crisp french bread in bottom of bowl before adding soup. Serve with grated cheese on top of each bowl.
