We love looking for great sounding recipes to try that are easy to fix. We bought a recipe box at an estate sale and found this wonderful recipe for a simple version of French Onion soup that can be made in a crock pot.
Crockpot Onion Soup
Ingredients:
4 cups (or 1 quart) beef broth
3 cups yellow onions, thinly sliced
1/4 cup butter
1/2 teaspoon salt
1/4 cup white sugar
2 Tablespoons flour
1/4 cup cooking sherry (or substitute water)
1 cup grated Parmesan cheese (or substitute Swiss) for topping
Steps:
- Pour beef broth in crock pot.
- Slowly stir and cook onions and butter in a skillet for 15 minutes on low.
- Mix remaining ingredients (excluding cheese) into skillet and stir well.
- Pour skillet mix into crock pot with broth.
- Coook on low for 7-8 hours or on High for 3 hours.
- If desired, put optional slice of crisp french bread in bottom of bowl before adding soup. Serve with grated cheese on top of each bowl.
